I got this out of Martha Stewart’s Every Day Food. You make it in the microwave!
Chop up 4 slices of bacon and one onion. Put in a 2 qt microwaveable bowl and microwave for 7 minutes. Bacon should be crisp. Chop one medium orange (or yellow) bell pepper, 2 ribs of celery, and cube one potato (1/4 inch cubes). Add to bacon and onion. Season with salt and pepper and microwave with a cover for 6 minutes.
Add one can of diced tomatoes (with the juice) and 8 oz of clam juice to the mixture. Cover and microwave for 2 minutes. Take 2 filets of tilapia, season them with pepper (I used a lemon pepper mix) and lay them on top of the mixture. Cover and microwave for 5 minutes.
Flake fish with a fork and stir ingredients. Add chopped parsley (I prefer cilantro) and let stand to finish cooking about 5 minutes.
This was incredibly tasty. I served it with some homemade wheat bread.
